This healthy green smoothie has me running back to the store for gargantuan boxes of spinach twice a week! I'm telling you, it is so yummy- and couldn't be easier for a meal replacement when you're short on time. So if you're looking for something to offset that pecan pie I posted, (or those delicious chocolate croissants Nancy), this is your ticket!
Note: Consistency may vary depending on your blender. My number one recommended kitchen splurge is a Vitamix Blender. You just can't get more perfectly silky-smooth soups, smoothies or sauces with anything else.
Green Smoothie (Serves One)
1 1/2 Cups Unsweetened Almond Milk
1 Banana
1 Packed Cup Fresh Baby Spinach (No! Do not try substituting frozen!)
2 Tablespoons Gluten Free Old Fashioned Oats
1 Tablespoon Flaxseed
Stevia, Raw Honey or Coconut Nectar to taste
Place ingredients into blender and process until smooth and creamy. Easy! Pour into a tall glass, garnish with a bendy straw and enjoy all the healthy-goodness you're giving yourself!

Still saving up for that Vitamix. It's at the top of my wish list, kitchen or otherwise. I also love that the company is based in our hometown...Cleveland!

You can make the shake using a blender for now (using ground flax-seed will help- the reason I recommend whole is flax loses a ton of its nutrients once it's been ground). You'll love the Vitamix. I'll be posting some great soups that you'll love making in the Vitamix. It's great because you can put hot liquid in it and gradually turn up the motor without blasting hot soup all over the place.

Do you think I could use frozen spinach?
Posted by: Pamk | Saturday, January 29, 2011 at 10:22 PM
You've got to use fresh. The frozen spinach just doesn't have the same fresh flavor. It's highly concentrated so you'd get a chlorophyl taste instead of a fresh lite milkshake.

Made one today - delicious! (Although we have no flaxseed, whole, ground, or otherwise up here). I think I'll try adding spinach to other smoothies too, it has an surprisingly mild flavor.

I've been having a daily green smoothie too. I finally lucked into ground flaxseed (at the chiropractor, no less). I've been adding that and a bit of thawed frozen mango to mine too. I swear it's been doing wonders for my skin and my energy levels.

I totally agree! And I too love it w/ mango- I sub it in for the banana.

Wanted to let you know that I now have my mom and Aunt hooked on them too :)

These smoothies are fantastic, but one thing to consider is to rotate your greens. Spinach one day, kale the next, collards, the next, chard, and back around you go. That way you'll get all the essential enzymes and not overload or overwork your system with the same thing all the time.
My vote is for the Blendtec, personally. Love the preprogrammed buttons on front--the kids can make their own goodies.
Bon apetit!

Kathryn, I totally agree! Rotating greens in this one is a great idea- and I've found it still tastes awesome. However, I admit, I'd been using spinach primarily- you've motivated me to start mixing in the Collards, Kale and Chard. Pretty soon I'll be harvesting them from my garden so that should make it easy:-) Thanks for stopping by! Visit often:-)
